      <title>Grandma's Apple Cake </title>

      <description>&lt;a href=&quot;http://www.beechwoodorchards.com/Beechwood_Orchards/Recipes/Entries/2009/3/11_Grandmas_Apple_Cake_files/apple-cake.jpg&quot;&gt;&lt;img src=&quot;http://www.beechwoodorchards.com/Beechwood_Orchards/Recipes/Media/object001_1.jpg&quot; style=&quot;float:left; padding-right:10px; padding-bottom:10px; width:285px; height:173px;&quot;/&gt;&lt;/a&gt;Grandma Grace's Apple Cake&lt;br/&gt;1 1/2 c oil&lt;br/&gt;2 c sugar&lt;br/&gt;3 eggs&lt;br/&gt;3 c diced apples&lt;br/&gt;3 c flour&lt;br/&gt;3 tsp vanilla&lt;br/&gt;1 tsp salt&lt;br/&gt;1 tsp baking soda&lt;br/&gt;1 tsp cinnamon&lt;br/&gt;1 c chopped nut (optional)&lt;br/&gt; &lt;br/&gt;Glaze:&lt;br/&gt;1/2 c butter&lt;br/&gt;1 c brown sugar&lt;br/&gt;1 tsp vanilla&lt;br/&gt;1/2 c milk&lt;br/&gt; &lt;br/&gt;Combine oil, sugar, and eggs; beat well.  Add the rest of the ingredients and mix well.  Bake in a greased and floured 9x13 pan at 325 for 50 minutes.  Let cool; then glaze.&lt;br/&gt;Glaze: Combine all ingredients in a saucepan.  Bring to a boil.  Pour over cooled cake.  This is very runny.  Let glazed cake set for 15 minutes.</description>

Empire apples, peeled, cored, and cut into 1 in. chunks&lt;br/&gt;2 Cups apple cider&lt;br/&gt;1/4 Cup Dark Brown Sugar&lt;br/&gt;1/4 Cup Honey&lt;br/&gt;1/8 tsp. Cinnamon&lt;br/&gt;Pinch ground allspice&lt;br/&gt;Pinch kosher salt&lt;br/&gt; &lt;br/&gt;Combine apples and cider.  Bring to a boil then reduce to a simmer.  Cook, stirring occasionally until apples have mostly broken down, about 30 minutes.  Force mixture through a sieve. (You could probably use a food mill or a processor for this step as well)  Return to pan and whisk in sugar, honey, and salt.  Bring heat back up till it is vigorously simmering, stirring occasionally,  and maintain until it reduces to a spreadable consistency. (About 75 minutes)  Let cool completely before storing.  Last two weeks in the fridge.</description>
